Bacon Wrapped Chicken With Lemon & Bacon Stuffing

If you don’t like bacon stop reading right now because this chicken recipe has it inside and out!  

It also has a lovely lemony stuffing and the good news is that like all my recipes, the stuffing is grain-free and gluten-free.  I haven’t made this dish since I changed to a Primal/Paleo lifestyle because, you know, it had a cup full of soft white breadcrumbs. Well, 18 months of cooking without wheat or grainy flour, I’m pretty game for any kind of experimentation. So almond meal came to mind – has the consistency of softish breadcrumbs, doesn’t taste to strong – works with cakes! So why not give it a whirl.

Well the results turned out just yummy and I hope you enjoy it as much as we did!

Piri Piri & Lime Chicken with Creamed Cauliflower

Dinner for one!!

When you are used to cooking for a crowd or even for two, and then you have time on your own, it can become a big chore to cook for yourself.  I know I made a lot of excuses on my way home thinking to myself perhaps I could have a bit of salad, or something like a quick omelette.  

But I knew that I had boneless chicken thighs in the fridge and they really did need to be cooked. So I pulled it all out of the fridge and started slicing.

Well, what I didn’t realise was that cooking up this little feast for one was just as quick as making an omelette (or nearly).  It was around 25 minutes from getting everything out of the fridge and getting it onto the table and in my tum!

Balsamic & Rosemary Chicken with Stir Fried Ginger Vegetables

It’s Labour Weekend in New Zealand, the first long weekend in spring, yay!  It’s the weekend where people either relax at home maybe preparing the garden for planting, doing outdoor chores and all those jobs that have been put aside over the winter.  Or the more adventurous throw caution to the wind and leave the city, hopeful that the long weekend grid-lock just won’t happen this year!  I wish them the best of luck and hope they have a stress free drive.  Being the homebody I am, after posting this recipe, I’m off to hit the garden and clean out my chicken coop.

So given that the meat part of this dish is chicken, perhaps it should be whispered about outside so my girls can’t hear and have yet another excuse to not produce any eggs today. Unproductive chickens, yes that is a story for another day.

So onto the food!  I love the crunch and colour of stir fried veggies and this dish has plenty. It’s straightforward to make, so don’t let the long list below scare you off, as you will have everything prepared to cook before you even start. And it’s a great dish to make in tandem with a partner who is a whizz at chopping veggies!  

Don’t limit yourself to the vegetables I have suggested, add your own favourites.  Just make sure that if they take a while to cook they go in first.  Then the only thing to watch is to not overcook your yummy vegetables and lose the crunch or under cook the chicken pieces. So get marinading today and you have tomorrows dinner sorted.
