Everywhere you go at this time of the year, you are confronted with chocolate eggs.  It doesn’t bring out any cravings for me now as I see then as a load of mass produced sugar bombs.  I have yet to see any that are refined sugar free, so I have easily avoided them.

However, I do love chocolate, and coconut, so although these are not chocolate eggs I think they are a pretty great delightful no bake Easter treat from Beth at the Hungry Club.  Delish layers of cooconuty and chocolate heaven and no refined sugar, just a few spoons of pure maple syrup.

To make 15 small bites, gather together

2 1/2 cup desiccated coconut
4 tbsp cocoa
3 1/2 tbsp coconut oil
3 1/2 tbsp pure maple syrup
4 tbsp almond or cashew butter
2 tbsp thick coconut cream
1/2 tsp vanilla extract

If you want to replace the top chocolate layer with some top quality 85% organic dark chocolate then you reduce the ingredients by 

1 1/2 tbsp coconut oil
2 tbsp cocoa
1 tbsp pure maple syrup
