Slow Roasted Lamb with Ginger, Garlic and Gin.

I haven’t made roast lamb for a while now and I’m not sure why as it is so easy and tastes so great!  We are so very lucky in New Zealand as our lamb, indeed all our meat is generally grass feed and very tasty! 

So I decided to get out an old recipe which I last used a decade or so ago and give that another try.  This recipe has a surprising addition, a great slug of gin!  But don’t be frightened by the gin, the alcohol is burnt off during the cooking.  And it is optional, so don’t worry if you don’t have any or prefer not to use it.  However, it does add a little something different to the long slow roasting which is the key.

Slow Cooker Lamb Shanks with Leeks & Balsamic Vinegar

I’m loving my new crock-pot/slow cooker which I bought for half price in a recent sale. I’ve used it more times in the past two weeks than I used my old one in the previous two years. Funny how having something shiny and new make you want to use it more!

I love Lamb Shanks and thought I’d adapt my old recipe and give it a whirl.  Well the results were outstanding.  Melt in your mouth delish, so very yummy!

And the best part was that the lamb shanks I used were huge so we had enough for three meals so we have eating them for the past two nights in a row and the rest is in the freezer for another time. I’m picking that it probably won’t last too long in the freezer!

Shepherd’s Pie with Cheesy Sweet Potato Topping

Another old-fashioned, comfort food dish is Shepherd’s Pie.  Historically made to use up any left over meat, it dates back to 1790’s.  There are a number of different variations so when it is made with beef  it’s called Cottage Pie and if it is made with lamb, then it’s Shepherd’s pie.  That is because shepherd’s look after sheep – how cute is that?

This particular recipe is originally from a well-known diet company, and although it was relatively tasty as a low fat version, there always seemed to be something missing.  Pretty obvious what was missing, it was the fat!  So adding this back in as butter, cream and cheese not only makes the dish look 100% more enticing, the meal itself leaves you feeling totally satisfied and, not surprisingly, rather full!
