Merry Christmas, Happy Holidays and best wishes to you all. 

It has been just over a year since I ditched the grains, refined sugar, seed oils and processed food. A year  of effortless weight loss, abundant energy, no carb cravings and boring everyone I talk to about the wonder of this way of eating!

Over the past seven months I have documenting this through Paleo with cream. Thanks to you it has been pretty awesome.  I started this as a way to put my new recipes in an easily accessible place for my scattered family. However, the original aim has now grown to include all the lovely people who take the time to drop by for a visit.  I hope you are still enjoying the recipes and my rambles as there are plenty more to come in the future!

Enjoy your festive, holiday season and eat with relish lots of lovely whole food.  I leave you with a taste of what will be my next blog post; Strawberry and Blueberry Almond Tart with Creme Patisserie.  A festive dessert that is not going to last too long on my Christmas lunch table today!

Spinach & Chicken Thai Meatballs (Gluten & Egg Free)

I had my first taste of meatballs as an adult only this year when I went to Baduzzi restaurant.  These guys know how to make the most divine meatballs.  As I have said before, my previous experience as a child put me off nearly for life!  That’s in the past now and I’m always on the lookout for a new recipe to add to my collection.

So thanks Hungry Club for these Thai inspired chicken meat balls.  I would say they’d be perfect served with some simple wok fried vegetables.

I’ve always had a thing for truffles. I don’t know what it is. Ever since I was a kid I’ve loved making, and subsequently devouring, truffles of all types and flavours. They always felt like such a fancy treat, so now, with a abundance of tried and true flavour combinations; they’re my go to snack for afternoon visitors or to pack into The Man’s lunch.

Peppermint and chocolate is one of my favourite combinations, it’s refreshing and delectable! Be careful when adding the flavour oil, if you accidentally add a smidge too much it can be like licking toothpaste off a candy-cane – peppermint overload. I like to drop mine onto a spoon first and then tip into the mixture. Too many slip ups have taught me caution!
