I’ve posted a potato salad in the past.  Made with Easy As Homemade Mayo and flavoured with mustard.  I also touched on how cooked and cooled potatoes are a source of resistant starch which is great for feeding your good gut bugs. Well, here is another take on this delicious salad using a couple of my favourite ingredients, bacon and shallots. 

There are some who shun potatoes, perhaps finding them a too carby, or have an intolerance and to be honest, I don’t recommend eating this salad every night either.  But as a side to a perfectly cooked  juicy steak, I think that Potato & Bacon Salad is pretty hard to beat.

When I started primal/paleo eating November 2013 I stopped eating potatoes – well I switched to sweet potatoes.  Now don’t get me wrong I love sweet potatoes so it was no hardship. However there is a family dish that I generally make during the summer and always make on Christmas Day (NZ Christmas is in the summer!), Potato Salad.  So being new to the lifestyle and with the whole family embracing primal eating, that ended up being Sweet Potato Salad – a different dish entirely.

Then there was the mayonnaise – store bought full of revolting seed oil and my attempts at homemade were really not good.

A couple of things have happened since then.

I learned about the gut feeding qualities of resistant starch, I discovered that cooked and cooled potatoes fall into this group of starches.   The second thing was I found that the key to making homemade mayonnaise  that tasted yummy was to use a light tasting olive oil.

It did take me a while to click into these two separate discoveries, and think Potato Salad is on the menu again!!  It’s now Spring in New Zealand and time to start thinking about outdoor cooking and cold salads.

So here is my so simple it’s silly, Potato Salad – I hope you enjoy it as much as my family does.

Spicy Wraps – Grain & Gluten Free.

Living Primal style is mostly a no brainer, yes you do get strange looks and mutterings from friends and colleagues as you pour cream on everything. But that’s not really a problem is it?  However many of you will agree that when you don’t eat grains it’s darn hard to find something to wrap your lunch stuff around. This spicy wrap sorts out the problem nicely and in addition, like all primal/paleo food, has a number of healthy bonus points to add to it.

The recipe uses plantain bananas.  Larger than normal bananas they are used in cooking in many tropical areas in a similar way to potatoes.  As they are very starchy they are perfect to bind together in a spicy wrap. 

Plantains and for that matter green bananas have some very interesting health benefits as they are a fantastic source of Resistant Starch (RS). In essence, RS is indigestible and it travels through us pretty unscathed. When it reaches the colon however, our gut bugs (colonic flora) eat it up. Marks Daily Apple nicely describes RS as top-shelf food for our colon bugs. This makes for a truck load of very happy good bugs!

Add to all of the above and with a big thanks to Paleo Secret for the original recipe, these wraps are awesomely simple to throw together.  In no time at all you can stuff them with your favourite fillings and feast on their deliciousness.
