I recently posted one of my favourite spicy recipes Chicken Korma.  Now I am the first to say (as I did) that my camera skills can be rather, shall we say, marginal at times!  There are some recipes that well, just look blah on the plate.  Tasty in the tummy though.  Now if I had added a few beautifully coloured vegetables, or even a tiny bit of garnish things may have looked better.  

Anyway, I have just found the perfect accompaniment to the Korma. This simple but tasty looking (better camera skills!),  recipe from Devika’s Kitchen, I think will be a perfect addition to Chicken Korma!

The wonderful thing about not freaking out about fat is that you are open to all sorts of possibilities.  

Consider a Tuesday night, you are nearly through to Hump day, the week is still blah!  So do you really want to prepare food when, let’s face it, a heathy slug of red wine is so much more tempting.  But feed the inner you is what needs to happen at some point.  Well, luckily for me our supermarket (food market, call it what you want market), sells BBQ free range chicken and nice and moist it is.  But  chicken on it’s own, although rather enticing, needs a little something extra.  So a forage in my fridge comes up with sour cream, mushrooms and a 1/2 bag of baby spinach.  

Brilliant – so here we go!!

Don’t you just love roasted vegetables?  Here is an old favourite of mine using Sweet Potatoes, Carrots and Parsnips.  It’s a really easy recipe you can quickly prepare and throw into the oven.

An ideal dish to make on Sunday night as it is delicious served hot as a side dish or served cold the next day as a salad. You can vary the type and quantity of vegetable to suit.  For a lower carb option try it with pumpkin or squash.
