Once a month at work the various areas in our department put on a themed evening. Last week it was wellnes themed. Being the total stay at home I am, I didn’t stay long however, but long enough to taste test some amazing chocolate fudgy slice. Made with dates and coconut oil along with some other ingredients, they were totally scrumptious! I have been meaning to ask for the recipe but now I have found something very similar on Texanerin Baking’s lovely blog.

Ah my Sweet Louise Cake – sweet shortbread flavoured cakey base, sweet red jam in the middle, topped with sweet coconutty meringue. Timeless recipe from the Edmonds cook book. Well, that’s how most of us Kiwis and Auzzies remember Louise cake, the treat from childhood.
