What I love about giving up refined sugar is all the creative ways people look to recreate chocolatey treats. I love the use of coconut milk 🙂 all I can say is oh yum they look scrumptious! Thanks to Hungry Club!

I was always the BIGGEST fan of bounty chocolate bars. The chocolate shell, the coconutty centre – a combination of flavours I completely love. It was one of my favourite special snacks.

More recently  (after I decided to learn to make more things from scratch) I tried my hand at my own version of these favourite chocolates. You can make them as bars or truffles but I find truffles to be the easiest snack size and also less messy to coat in some delicious dark chocolate.

If you’re feeling super keen or creative, you could even try making your own homemade chocolate for the shell. Perhaps that’ll be my next attempt…

2 cups dried coconut (thread or chips)
3 tbsp full-fat coconut milk (is best if you use the ‘thicker’ portion from the top of the can)

This seems to be the Chocolate blog week! And I think there is still another chocolate recipe to come 🙂

This time I am cheating, or should I say sharing the love, as I just can’t take the credit for the awesome base of this slice.  But like many successes sometimes they have to come from a failure.

I came across Heather from Cook it up Paleo when I was looking for a chocolate bliss ball.  While these Ultimate Chocolate Macaroons were not quite what I was looking for, her recipe looked so tasty they distracted me and I had to cook them up.

Well, I think that I had only been out of hospital for less than a week.  You know old lady gets a new hip, but cooking obsession takes hold and so hobbles on crutches to the kitchen.  And this is where the failure comes in.  I made the mixture using what I had in the cupboard.  Cooked about a 1/3 and froze the rest for later.  I couldn’t wait to try them, so did the usual photo and tucked in.

Oh no.  At this point I realised that I hadn’t read the all the instructions and in my enthusiasm (read should still be resting quietly in bed), I missed out the egg.  Sorry Heather I didn’t tell you this!  But don’t get me wrong these were still tasty eggless, but I’d recommend adding a bit more coconut oil!

Anyway, so it did wake me up during the night thinking about that other 2/3 batch in the freezer.  That’s when I thought, well why not just mix them up again and add the egg? And as you do at 3am, mind whirring away, I thought why roll these into balls, just be lazy and bake it as a slice.  Then top it with some Chocolate Ganache to get a double chocolate hit.

So that’s just what I did and here it is.

But I also saved a little of the mix and pressed that into a mini tart base – well that’s the next post.  Sorry this has been a novel before the recipe but that’s how it works out some days, doesn’t it?

As a six year old I was expert at making chocolate fudge that was the best I have ever tasted.   Yes, I am a show off!    But, of course it was full of sugar; cups and cups of it.    Going primal and refined sugar free, well my fudge is no longer an option 😦     So when I came across this recipe from RAD Cooks – wow!

 I love that the recipe encourages you to try other flavours.    I am going to go with the coconut theme and add some desiccated coconut.

It is actually kind of interesting. Christy, the owner of Honey Mama’s, is my neighbor. She is super nice and seriously has a passion for this stuff. She sells to stores in Portland, and is expanding to Washington! She even ships… its a dream. And, you know the video, Honey Mama’s: Redefining Fudge, on her about page? I directed and edited it! She was awesome to work with. Anyways, you have to try her fudge. My imitation is good, but who can refuse fudge made with an old family recipe made by a wonderful woman, in a cute package?

Where my fudge diverges from hers is the accents. I have developed a spice and a fruit version, in addition to the original.
