Banana & Coconut Bread

Mid week and I’m thinking that some tasty Banana and Coconut bread will get me through to the end of the week.  I first posted this recipe about six months ago, so it’s time to make it again.

Hide this bread as soon as it comes out of the oven, or it will suddenly disappear!

Giving up grains and refined sugar I thought that cakes and bakes were a thing of the past – the old eating.  Way too much sugar, not to mention all that wheaty flour; boy was I so wrong! 

Baking has now become an interesting challenge.  When you work with grain your results are generally pretty predictive. Mix this and this to get that.  But working with nut flours and heaps of eggs is a whole different ball game however the result is even better than the food baked the old way.

When you want a quick snack to fill a tiny gap mid afternoon, isn’t it so much better to know exactly what is in your, hopefully, healthy nut bar?  Well there are nut bars and there are nut bars – if you know what I mean.   Seriously, have you read the list of ingredients (if you can call them that), in a typical nutty snack bar?

So how about these? Inspired by Beyond the Bite; super easy, 6 ingredients whizzed up left in the fridge until set, then wrap and go!

Chicken Korma

 I love spicy food, that lovely tingle of after-burn is the sign that the level of heat is just perfect.  However, while I am not quite up to the “so spicy I sweat” level of enthusiasm, I do know some people who think that there is no point to a curry if you don’t need to brow mop :).  On the other end of the spectrum are those that, while they love the taste of spicy food do like just a hint of heat in their curry.

This is why I love making my own curry so I can control how much heat I put into the mix.  And so can you with this Chicken Korma dish, just adjust the amount of dried chilli flakes and there you go.

This recipe is ideally best prepared the day before, so the marinade does its magic and makes the chicken tender.  But if you are in a hurry, cook it up, I’m sure it will taste great! Which is more than I can say for my photography, which does not do justice to the dish!
