To be completely honest with you, I am reblogging this post as I don’t want to lose the recipe. And I just love mint and like most of you, I also love chocolate. So it goes without saying that I love chocolate mint cookies. Not everyones favorites I admit, but I can’t help but drool somewhat when I think about biting into a chocolate and mint cookie. Heck I even tried making mint Kombucha – not a success, but that is another story.
So today I am lazy, my kitchen creation bucket has emptied, so it is super handy that Casey Joy at Fed and Fit is so good at letting us lazy bloggers share her recipe.

Fed & Fit » Paleo Thin Mint Cookies
Oh yes they do look good, and what’s better the recipe makes around 36 of these tasty little thin treats. So they are perfect for bake sales or afternoon tea treats.
Start by gathering together the following ingredients
Cookies
3 cups Sifted Fine Almond Meal / Flour / Ground almonds
4 Tbsp 100% Natural Unsweetened Cocoa
1/8 tsp Kosher Salt
½ tsp Baking Soda
1/3 cup Honey
2 Tbsp melted Coconut Oil
½ tsp Mint Extract
1 Egg
Frosting/Topping
2 cups Dark Chocolate Chips or around 250g 85% Dark Chocoalte
1 cup Full-Fat Coconut Milk or Cream
½ tsp Mint Extract
