If the thought of organ meat makes you squeamish, then this is a tasty way to include some in your diet.

Did you know that liver is one of the most nutrient dense foods you can find? Packed full of nutrients, it should be regularly on your menu.  However, for many of us saying that we should be eating it regularly is a bit different to digging in and eating it with relish!

Every now and again, my son, in a gentle way will badger me, (read nag), about eating liver.  He is a purist – a primally inspired young man who takes his health seriously. I’ve posted a potato salad in the past.  Made with Easy As Homemade Mayo and flavoured with mustard.  I also touched on how cooked and cooled potatoes are a source of resistant starch which is great for feeding your good gut bugs. Well, here is another take on this delicious salad using a couple of my favourite ingredients, bacon and shallots.

There are some who shun potatoes, perhaps finding them a too carby, or have an intolerance and to be honest, I don’t recommend eating this salad every night either.  But as a side to a perfectly cooked  juicy steak, I think that Potato & Bacon Salad is pretty hard to beat.
