Dinner for one!!

When you are used to cooking for a crowd or even for two, and then you have time on your own, it can become a big chore to cook for yourself.  I know I made a lot of excuses on my way home thinking to myself perhaps I could have a bit of salad, or something like a quick omelette.  

But I knew that I had boneless chicken thighs in the fridge and they really did need to be cooked. So I pulled it all out of the fridge and started slicing.

Well, what I didn’t realise was that cooking up this little feast for one was just as quick as making an omelette (or nearly).  It was around 25 minutes from getting everything out of the fridge and getting it onto the table and in my tum!

Burgers!

So, who doesn’t love burgers, the ultimate fast food.  All that yummy tastiness eaten with your hands – and the first bite where it squishes everywhere, delish!  Or if you are a neatnik and don’t go for the ooze, then cut and forking that first bite is just as great.

Just because we are eating healthy whole foods doesn’t mean we have to give them up.  We just make them ourselves, and instead of wrapping them in a carb, grain and gluten laden bun, we wrap them in a large lettuce leaf or make our own paleo bun (but that’s for another day).

I totally love them in crispy, iceberg lettuce – give them a try, and I guarantee you’ll be hooked too!

Duck Fat Roasted Vegetable Salad

Roast vegetables are pure comfort food for me. They bring back memories of my mother and grandmother’s roast nights.  Big chunks of vegetables lovingly basted in beef dripping, sitting in with a chicken and all the flavours melding together. The flavour of roasted vegetables in duck fat brings those memories back.

This is a really easy recipe you can quickly prepare and throw into the oven. An ideal dish to make as it is just as delicious served hot as a side dish or served cold the next day as a salad. You can vary the quantity of your vegetables depending on what you have and what you like.
