To be completely honest with you, I am reblogging this post as I don’t want to lose the recipe.  And I just love mint and like most of you, I also love chocolate.  So it goes without saying that I love chocolate mint cookies.  Not everyones favorites I admit, but I can’t help but drool somewhat when I think about biting into a chocolate and mint cookie.  Heck I even tried making mint Kombucha – not a success, but that is another story.

So today I am lazy, my kitchen creation bucket has emptied, so it is super handy that Casey Joy at Fed and Fit is so good at letting us lazy bloggers share her recipe.

Just take a look at how yummy these little numbers are!

If the thought of organ meat makes you squeamish, then this is a tasty way to include some in your diet.

Did you know that liver is one of the most nutrient dense foods you can find? Packed full of nutrients, it should be regularly on your menu.  However, for many of us saying that we should be eating it regularly is a bit different to digging in and eating it with relish!

Every now and again, my son, in a gentle way will badger me, (read nag), about eating liver.  He is a purist – a primally inspired young man who takes his health seriously. So, I have been thinking for sometime that the only way I could eat liver is to have it as  pate or hidden in a bolognese sauce.

Pate won the day.

Broth made from organic beef bones and vegetables is so rich and nourishing. Use it as a daily tonic, to make a batch of flavoursome soup or to add to stews and casseroles.

When you make it yourself you know exactly what is in it.  Using a slow cooker and the brown, chop and throw together method of cooking makes this super easy!

My last batch of beef bone broth gave us over 2 months of rich goodness.  But I’m onto my last frozen batch so it’s time to brew up some more.
