When you eat a low carb, don’t make the mistake of eating low fat! To add more healthy fat to your food make your own healthy mayonnaise using quality light flavoured olive oil. Try a buttery sauce  on your eggs or vegetable like Hollandaise or be decadent and make a full cream Mixed Berry Iced Cream for dessert.

Orange, cranberry & strawberry muffins

Yummy home-baked muffins, not a lot more to say is there really?  I found the inspiration for this recipe at Cook Eat PaleoLisa’s versions are totally paleo and dairy-free.  Me, well I like my paleo with cream, and go for the dairy mostly every time.

So here you go, get to it, they only take 5 minutes to mix up and pretty soon you will a tasty muffin or 6.  They are perfect to eat as they are or cut them in half and add a pat of butter, load up with whipped cream or for a richer decadent taste, try a good spoonful of mascarpone cream instead.

Hot Smoked Trout Salad with Honey, Mustard and Dill Dressing

This looks like something yummy for lunch. And I think hot smoked salmon would be a tasty substitute for trout!

Asparagus is in season, hoorah!

This salad is all about asparagus and smoked trout, simple and delicious without too much effort!

I serve this with some crusty bread, it really doesn’t need anything else.

Serves 4 as a main.

Ingredients

1 whole smoked trout

2 bunches asparagus

200g mixed lettuce leaves

2 large tomatoes, sliced

2 avocados, sliced

3 eggs

a few dill fronds

Dressing

4 teaspoons olive oil

1 teaspoon white wine vinegar

1 teaspoon honey

1 teaspoon Dijon mustard

1 teaspoon dill fronds

Method

In a small bowl whisk the oil, vinegar, honey and mustard.

Remove the whisk and stir in the dill, a little salt and a good grinding of pepper.

Bring a small pan of water up to the boil.

Pop the eggs in, bring back to the boil and boil for 5mins.
